
Hey Mom, Whats for dinner?? Sound familiar?? This is probably the number one question asked daily to most moms ( and dads). Well sometimes I have an answer and sometimes I am as stumped as the kids. But here is one recipe that gets the ‘oh yah’ when I say we are having it for dinner. Super Salmon Burgers..I am not sure about your house, but if I make anything into a ‘burger’ the family will devour it.
That is why I love this salmon burger from Gwyneth Paltrow’s book, Its All Good. Not only is it easy to make, but protein packed, flavourful and with only a few ingredients that anyone will have in their pantry.

Well some may think Gwyneth is one of those crazy celebrity moms (tell me one mom who isn’t a little cray-cray), her cookbook is full of recipes that are natural, minimal of ingredients and great for families. ( A birthday present from my awesome friend, Christine!!)
I do find it hard to incorporate fish into our daily meals, what with being a distance away from the ocean, our fish is not always the freshest. But if you know the fish schedule at the local grocery store, you can usually get a good fresh fillet or two.
Benefits of Salmon
Salmon is great because it is high is omega 3 fatty acids, which is awesome for heart health, brain health and helps to reduce inflammation in the body. It is high is Vitamin D and 4 oz has 31 grams of protein..Wow!! Try to get it in season and opt for wild over the farmed version.

What I love about this recipe is the use of cilantro. Now cilantro is one of those love it or hate it kind of herbs, but if you can love it, it has so many health benefits.

Cilantro, a strong antioxidant, helps cleanse the body of toxic metals (and yes we do get bombarded by these daily), is great for heart health, normalizes blood sugar levels and is good for digestion. If you are one of the few people that think cilantro tastes like soap, try it again, it might change for you over time. Cilantro does add a lot of flavour to this burger but if it is not for you, you can opt for parsley instead.
Tip: Prior to grinding the salmon in your food processor, you will want to place on a sheet pan or plate and chill in the freezer for about 15 minutes. The cold temperature will help to grind the salmon evenly without it turning into a paste.
This salmon burger will for sure get your family asking for more. My kids are always fighting over the last one. You may even want to make extras and freeze them for later when you are looking for a quick meal before the next drop off to the kids sporting activities or to cook up after a training session.

Salmon Burgers
Ingredients
1 lb salmon fillet, remove skin, debone and cut into 1 inch cubes
2 tbsp drained pickled ginger ( can add more to taste)
1/2 small red onion, roughly chopped
1/3 cup cilantro leaves
2 tsp and up to 2 tbsp soy sauce (can use wheat free tamari or Braggs if you have a soy allergy)
2 tsp toasted sesame oil
1/2 tsp sea salt
1/4 tsp freshly ground peper
2 tbsp oil
Sriracha mayo
Directions
Place cubed salmon on a plate or sheet pan and pop in the freezer for about 15 minutes until is is very cold but not frozen. See tip above. Once the salmon has done chilling, add to the food processor and pulse until completely minced. You will want to do this is 2 batches.
Place the ground salmon into a large mixing bowl. Add the remaining ingredients into the food processor and pulse until finely chopped. Add the aromatics to the salmon and mix completely with a spatula ( using your hands works the best..). Form into patties. At this point, you should refrigerate for 30-60 minutes ( or even overnight). You can also stop here and freeze them for another time if you wish.
Rub the burgers with the oil and cook until on a grill or grill pan at medium-high heat. Cook until browned and firm to the touch, approximately 5 minutes a side.
Serve on your bun with the Sriracha mayo and what ever other fixings you would like.
