Making a healthy, sit down family dinner does not have to be reserved for Sunday nights anymore. This chicken dinner which can be on the table in an hour works for any weeknight meal. It is sure to be a favourite.

About 15 years ago, just around the time that I was making a huge health change in the way our family ate, I happened to come upon a local chicken farmer who raised his chickens in a natural, healthy way. I decided to try it, and our family was hooked.
This family owned and operated farm just east of Calgary raises their chickens without the use of antibiotics, hormones or animal by products. They do not use chemicals in the bird’s environment and use a feed with high quality vitamins and organic minerals for optimal growth and health.

Now I know what you are thinking, this all comes with an extra cost. Yes, naturally raised chicken or any organic food product, is always typically slightly higher then the mainstream products. But the quality is incomparable. And the more we support our local growers and farmers, the more affordable it will become and better for the environment.

Using a bone in, skin on chicken breast (a cut you typically do not see at the grocery store) will definitely add to the flavour and moist-ness of this 5 ingredient roast chicken breast recipe.
Is moist-ness even a word?
You could prep this the night before and refrigerate, then have it ready to pop in the oven when you get home from work. Or even in between a drop off and pick up of the kids. Pair this with spaghetti squash, and a side salad and you will have a healthy meal for any day of the week.
5 Ingredient Roast Chicken Breasts
2-4 bone in, skin on, chicken breasts
4 large cloves of garlic, finely chopped
2 tbsp chopped fresh rosemary (1 tbsp dried will work as well)
1 tbsp olive oil
salt and pepper to taste
Preheat oven to 350 degrees.
Place chicken breast on a baking dish or sheet pan and rub with olive oil. Sprinkle with the rosemary/garlic and salt and pepper. Make sure to get some of the rub under the skin.
Roast for approx. 40 mins or until internal temperature reaches 165 degrees.
Remove from oven and slice for serving.
This is one chicken dinner that is sure to please the whole family but especially mom knowing that you are serving them the healthiest option you can. 🙂
