
It’s that time of year. The time to SHOP ’til you DROP and find the perfect gift for everyone on your list.
It is also the time of year when we just don’t have time or extra money laying around.
Here are THREE simple reasons you should make these Christmas no bake energy bites.
- They take literally less than 15 minutes to make
- Who has time to stop at the food court for a pick me up when power shopping?
- These fill the craving for Christmas goodies in one “clean” bite!

Pop a few of these into your purse, along with a mandarin orange or two and you have all you need to get through a long day at the mall.
ps – your kids will also love these between periods at school – tucked into their glove compartment in the car, or on their way to work out.
Here are three different Christmas no bake energy bites to try.
GINGERBREAD PROTEIN BITES

I have a small obsession with a good gingerbread latté. When I am out in the stores, feeling sluggish, and wanting a little pick me up – a gingerbread latté puts me back in the spirit of things. Of course, that pesky sugary syrup isn’t the best thing to put in your body, no matter what the season. SO – these no bake energy bites satisfy my craving not only for some gingerbread, but also for a quick protein boost. They are SO yummy!
P.S. They also fill the craving for gingerbread cookies . 🙂

Gingerbread Protein Bites
Ingredients
1 1/4 cup dates
1 cup rolled oats
1 scoop Vanilla Protein powder
1/2 tsp. Cinnamon
1/2 tsp. Cloves
1/2 – 1 tsp ginger spice
Toss all ingredients in the food processor and pulse until a sticky dough forms. Roll into balls and place on a cookie sheet. Put cookie sheet in the fridge for about 15 minutes to 1/2 hour to set. Enjoy!
CHOCOLATE PEPPERMINT ALMOND BITES

There is something about mint and chocolate that just screams CHRISTMAS! And hey – if you are a peppermint hot chocolate lover, these little bites will fill the craving and you won’t even need to juggle a hot beverage cup with all those bags at the mall!

These bites are made with dates. If your dates seem a little dry – simple soak for 5 minutes in some warm water. Drain and use the newly soft dates to make your dough! I used Terra Delyssa organic pitted dates because I like the resealable bag (!!)
Chocolate Peppermint Energy Bites
Ingredients
2/3 cup almonds
1/2 cup walnuts
1/3 cup unsweetened cocoa powder
11 Dates
1/8 – 1/4 tsp peppermint extract
Pulse nuts very roughly in the food processor – so not too fine! Add ingredients and pulse again to form a dough. Roll into balls and place on a cookie sheet. If you like, you can roll these in a tablespoon of cocoa powder to give them a matte look. Put cookie sheet in the fridge for about 15 minutes to 1/2 hour to set. Enjoy!
Will keep in the fridge about 7 to 10 days or in the freezer for 3 months.
OATMEAL DARK CHOCOLATE CHIP BITES
For the traditionalist – these bites are similar to an oatmeal chocolate chip cooke and are the only bites here with chocolate chips. We used Enjoy Life Dark Chocolate chips which are dairy, nut and soy free.

We made these ones with natural almond butter, but feel free to use the nut butter of your choosing. You can also eliminate the nut butter all together and add a tiny bit of water to the mix to make your mixture a little more moist. I tried them with both ways and found the almond butter mixture easier to roll…
Oatmeal Dark Chocolate Chip Bites
Ingredients
1 cup rolled oats
3 tbsp. flax meal
4 tbsp. honey
1/2 cup nut butter
1 tsp vanilla
1/2 cup dark chocolate chips
Add all ingredients into a large mixing bowl and mix well. Roll into balls and place on a cookie sheet. Put cookie sheet in the fridge for about 15 minutes to 1/2 hour to set. Enjoy!
Will keep in the fridge about 7 to 10 days or in the freezer for 3 months.
One thing to note:
If you have teens – it is in your best interest to double or triple these recipes. I mean really – 12 bites?? Those could be gone before I even clean up from making them! Also, these are not really the best breakfast choice – if your teens love something quick to grab in the morning try our Cookies for Breakfast – you won’t be disappointed.
