Gluten Free Almond Butter Cookies

Almond butter is my fav. I literally eat almond butter once every day for either breakfast or lunch or snack (!) so making these gluten free almond butter cookies was a no brainer.

We have a little time these days, and quite a few of us are baking up a storm. Sources say we are baking because, as humans, we seek a creative outlet. I must confess, I don’t feel there is any creative angle being filled when I’m baking. Let’s be real. When I’m baking these days it’s because I’ve got a craving, I’m bored, and I’ve got time to kill. That, and the fact that I can’t face the thought of heading to the scary grocery store to buy something store bought.

But I digress…

These gluten free almond butter cookes are delish, simple, and fill that “cookie craving” without being too naughty. And we all know that we’ve been naughty (er) in the last few months!!

They are gluten free, refined sugar free, and can be adapted in a few different ways that make them over the top.

These cookies have a Maldon salt sprinkle. Can we discuss how amazing this flaky salt is on a ton of dishes and why you need to have it in your pantry? If you haven’t tried Maldon salt, not only is it amazing on these gluten free almond butter cookies, but also on freshly grilled veggies, as a finishing touch, or grilled fish or chicken.

As we head into the grilling months, this is a no brainer to add a punch of flavour to simple dishes. I literally grill any veggie in a touch of olive oil and hit it with Maldon prior to serving. So – get some if you don’t have it 🙂

I think of myself as a bit of an almond butter connoisseur. I have one almond butter brand I use for just eating out of the jar 🙂 and one for baking. In my humble opinion, the best almond butter out there is Nuts to You. But I tend to bake with the biggest jar I can find, which is usually at Costco and the best bang for your buck. Yes, I know – princess separates her almond butters – but hey, almond butter is expensive and you don’t want to waste the really good stuff on baking.

Back to the cookies. Craving chocolate? Add a dark chocolate chunk on top of each cookie. These are incredibly easy, crave buster cookies. The only thing I will say is this. Have a few, then freeze them – otherwise you likely will eat the entire batch.

Gluten Free Almond Butter Cookies

  • Servings: 24 cookies

These cookies will calm the craving, without the guilt!

Ingredients


1 1/2 cups gluten free flour
1/2 teaspoon salt
1 teaspoon baking powder
1 cup almond butter – I like “Nuts to You” brand
3/4 cup pure maple syrup
2 teaspoons vanilla extract
Maldon sea salt to sprinkle
24 Dark Chocolate Chunks (optional)

Preheat oven to 350F and prep your cookies sheets.
Mix four, seas salt and baking powder.
Mix in the almond butter, maple syrup and vanilla making sure they are nicely mixed. (I use the paddle attachment on my mixer). Create small balls – about 1 tbsp in size and space them on your cookie sheet (about 12 in total per pan). Press down on each cookie with either a wet fork or your fingers to flatten. If desired at a dark chocolate chunk to each cookie. Sprinkle each cookie with a little of the Maldon salt.
Bake about 10 minutes and let cool before you dig in 🙂
