Finally it is Spring! Nothing like the sweet smell of rain in the air – mixed with the pungent smell of aged dog poo and dust. Hmmm – that made a dark turn fast… lol.

Actually… where we are, spring is one of those seasons that may just come for a day or two – sandwiched between an unexpected snowfall and bizarre “drinks on the patio” warmth. The one thing spring does bring is the hope of warmer weather, longer days, and the introduction of the long awaited fresh, local produce in the grocery store. If you are like me, by this time of year you are itching to put those heavy wintery dishes aside for a few months and welcome in the fresh light meals that seem to accompany the warmer weather.

Kitchen Sink Cookies – the healthy way to clean out the pantry!

These Kitchen Sink Cookies ROCK! In honour of Earth Day, Danni and I are teaming up with Community Natural Foods to bring you creative and fun ways to reduce food waste in your home. It was about 10 years ago that I really started taking recycling, composting and food waste seriously. I have to say, I am not the most extreme. I am known though to sanitize and re-use my zip loc bags over and over and go through the garbage in the kids bathroom to make sure there is no hidden recycling. With the onset of residential compost service and pick up in our area, I have our family heavily utilizing the compost bin and drastically reducing our waste output. BUT wow, do you see how much food you are wasting. In the past few months I have some discovered some tricks and fun ways to reduce our food waste. Not to quote Oprah or anything but…

I LOVE BREAD

Yup – it’s a fact that if I am craving something, more likely than not, I want a warm cookie, a loaf of sourdough, or pie…hmmmm pie. But I digress. Of course, if I caved all the time to carb longings, my attempt at a healthy example for my kids would be blown. So, instead I spend endless hours trying to think of ways I can make “bread – like” items that fuel the craving and the body appropriately. Healthy muffins are one of my favs for several reasons. They are such a great grab and go for breakfast or snacks. I can sneak in lots of added “goodies” without anyone in my family noticing 🙂 AND they are EASY PEASY to bake – who doesn’t feel like mom of the year with fresh muffins cooling on the counter?
