Gum Drop Cookies
So Christmasy and colourful on your baking tray - these cookies are chewy and delightful! They are also so easy and a cookie fav. for sure!
- 3/4 cup unsalted butter
- 1 cup sugar
- 1 egg
- 1 tsp almond extract
- 1/2 tsp salt
- 1 3/4 cup flour you can substitute gluten free if you want!
- 3/4 tsp baking soda
- 1 cup Gum Drops (1 package of Nutty Club) We use Nutty Club - but you can just cut up jujubes if you can't find them!
Preheat your oven to 350F. Prepare two cookie sheets by lining with parchment.
Cream butter and sugar together until well combined and light. Add the egg and the almond extract.
Slowly add dry ingredients until well mixed.
Stir in gumdrops
Drop cookies on cookie sheets - approx. 1 tbsp size will give you 24 cookies
Bake in oven for about 10 - 12 minutes. I start watching mine at about 9 - and usually pull out at about the 12 minute mark. You don't want them to get dark on top.
Let cool a minute on the cookie sheet and then transfer to rack until completely cool.
Store in a zip top bag in the freezer for Christmas (and hope that your kids don't eat them all before then :) )
